Ingredients

  • All-purpose flour/ Maida -1 cup + 1tbsp extra
  • Baking powder - 1tsp
  • Baking soda- ½ tsp
  • Tutti Frutti - ¼ cup
  • Sugar - ½ cup
  • Salt - ¼ tsp
  • Eggs -2
  • Oil - ¼ cup
  • Milk- 2-3 tbsp

Instructions

  • Preheat the oven to 180°c
  • Grease and line the loaf tin with parchment paper and keep aside.
  • Coat Tutti frutti with 1tbsp of flour and keep aside.
  • In a mixing bowl add oil, sugar and beat well with an electric beater until sugar is completely dissolved with oil. It will take approximately 3-5 minutes.
  • Add eggs one by one at a time to the bowl and beat well.
  • Next, sift the flour, baking powder, baking soda into the egg mixture.
  • Using a spatula, combine the mixture well using a cut and fold method.
  • Add vanilla essence along with 2tbsp of milk. Mix the mixture again.
  • Now add the tutti frutti and mix well.
  • Transfer the mixture into the prepared loaf and bake for 30-35 minutes at 180°c or until the toothpick comes clean.
  • Once it is baked allow it to cool in the tin for 5 minutes.
  • Now transfer the cake on to wire a rack and allow it to cool completely.
  • Once it is cooled completely cut into slices and enjoy with a cup of tea/ coffee or as a snack.
